I must say this was really, really good.  I had made BBQ Baked Beans (from scratch) the other night and I was looking around for a recipe that would be a good “Leftover Makeover” ... and this was perfect.  I mean, really - it couldn’t have been more perfect.

You could assemble this casserole in the morning and then cover and refrigerate it until you were ready to bake.  If you do refrigerate - add an extra 5 - 10 minutes to your bake time.

This will be featured on a game day menu for us.  I mean it’s a super kid-friendly casserole, but equally adult-friendly casserole.  Play around with different meats for the adult crowd if desired.

Don’t worry if you don’t have homemade baked beans on hand - goodness sake - give yourself a break ... here’s the recipe - you’ll love it ...

  1. -28oz can baked beans

  2. -1 pkg of 10 hot dogs, cut into 1/4 inch rounds

  3. -1/2 medium onion, diced

  4. -1 tablespoon mustard

  5. -1 tablespoon ketchup

  6. -1 tablespoon brown sugar

  7. - Shredded cheese (my add)

Optional - cooked rice for serving ...


Preheat your oven to 325

Pour the beans into a 2-quart casserole - Add the hot dog rounds - Add the diced onion (or omit if kids don’t like).

Add the mustard, ketchup and brown sugar.  Mix.

The recipe didn’t call for shredded cheese - but I could not resist ... I used some shredded colby-jack cheese.

And that’s it ... Bake in the oven for 20 - 25 minutes until bubbly and hot.

And the recipe says to serve over brown rice ... I didn’t ...

Because ... I served it alongside the Easy, Creamy, Cheesy Mac & Cheese Casserole.
