I put these burritos together by using all basic recipes I’ve posted.  Be sure to click on the links to get the full recipe if you need one.  And don’t forget to check out the entire page dedicated to Leftover Makeovers - to help save you even more time and money!


PS ... If you are using chicken, beans and rice that have not been previously frozen ... You can make these burritos (without any toppings/garnishes) and freeze them as the actual burrito.  When Eric was traveling a lot - I would make these in advance and individually wrap them in plastic and then place several in a sealable plastic bag and pop into the freezer.  That way when it was dinnertime and I wasn’t ready to cook a large meal for ONE ... I could pull out a burrito - cook it in the oven directly from frozen (it will just take longer) ... or defrost it and even warm it up in the microwave!  This would work for taking to work or school for lunch if you have microwave access!  Now that’s super smart cooking!


  1. -Basic Shredded Chicken Thighs (or you could use Diced or Shredded Cooked Chicken Breasts)

  2. -Zesty Pinto Beans

  3. -Basic Brown Rice   (or you could use Fluffy White Rice)

  4. -Flour Tortillas

  5. -Shredded Cheddar Cheese (I used Sharp White Cheddar)

  6. -Salsa (I used red and green), Sliced Black Olives, Sliced Green and Red Onion, Sour Cream, Shredded Cheese and Cilantro - all optional garnishes


Spray a baking dish with non-stick cooking spray.  Preheat your oven to 350 degrees.  I used my toaster oven.  *See above, these can be microwaved too!


Take a flour tortilla and begin layering - in the bottom half of the tortilla - your chicken, cheese, beans and rice.  I also added in diced red onion.


Fold the bottom half of the tortilla over once, pulling to make the tortilla fit snugly around the filling ... then fold the sides of the tortilla in ... and continue rolling until you have a nice little burrito!


Place the burrito - seam side down - in the baking dish.  Repeat.


Top with salsa and cheese - and place, uncovered, in the oven for 20 to 25  minutes - or until hot throughout.  Then remove the baking dish from the oven and garnish for a fun and festive presentation!  If microwaving - I like to use decreased power - like 70% - so that I don’t get the tortilla part of the burrito too hot that it turns tough when it’s time to eat!  ENJOY!!!
