Yesterday I posted the Master Recipe for Diced or Shredded Cooked Chicken.


You can literally put this together in the time it takes you to clear the dinner dishes and load the dishwasher.  Pop it in the fridge overnight to allow the flavors to meld - and you have one super scrumptious lunch - or potluck/party fare!


This is the basic recipe - because depending on the situation - I will vary it up. 


Here are some popular additions I add:


  1. -1 teaspoon Ranch Dressing powder

  2. -1 teaspoon Creamy Peppercorn Dressing Base (www.penzeys.com)

  3. -Dried Cranberries

  4. -Sliced Grapes

  5. -Slivered Almonds

  6. -Sliced Scallions (love these in the chicken salad)

  7. -Diced Celery

  8. -Pineapple

  9. -Diced Green Apple


You get the idea!  Make it your own!


Here’s the Basic Recipe:


  1. -2 cups diced cooked chicken (see recipe)

  2. -1/2 cup (or to taste) real mayonnaise

  3. -1 teaspoon garlic powder (not garlic salt)

  4. -1 teaspoon kosher salt

  5. -3/4 teaspoon onion powder

  6. -3/4 teaspoon black pepper


Mix it all together - and refrigerate for 30 minutes to overnight.  Will keep in the refrigerator for 3 days!
