This made exactly 24 mini cups.

You’ll need:

  1. -2 heaping cups of leftover Stovetop Bacon-Scallion Macaroni and Cheese

  2. -1 egg, beaten

  3. -1/4 to 1/2 cup Panko breadcrumbs

  4. -2 to 3 Tablespoons unsalted butter

  5. -Crisp bacon bits and sliced scallions, for garnishing (optional)


Preheat your oven to 375 degrees.

Spray a 24-cup mini muffin tin with non-stick cooking spray.

Melt the butter over medium-low heat.  When melted, add the Panko breadcrumbs and stir to slightly toast and combine.  Set aside.

If measuring out the leftover Stovetop Bacon-Scallion Macaroni & Cheese, spray the inside of your measuring cup with non-stick cooking spray - it will make the leftover pasta slide out really easily

In a medium-size mixing bowl, beat the egg.  Add the Stovetop Bacon-Scallion Macaroni and Cheese.  Mix thoroughly together with a rubber spatula.

Spoon the macaroni and cheese/egg mixture into the muffin pan cups.  I used my very small ice cream scoop.  If desired, top with crispy bacon and scallion slices.  Spoon the breadcrumb/butter mixture over the top of each mini macaroni cup.

Place in the oven for 15 to 20 minutes, or until the breadcrumbs are golden and you can hear the macaroni bubbling.  Your house will smell like bacon, YUM!

Allow to cool slightly, then un-mold using an off-set spatula.  If some macaroni has stuck to the edges, run your off-set spatula around the edges before gently popping the cups out of the muffin tin.  Try to contain yourself and eat only one!

And these aren’t just fun for a party ... you could put them in a lunchbox or picnic basket!  I haven’t tried freezing the leftover cups - but it might work, my fear is they might dry out - but perhaps for kids that would be just fine!  Otherwise, refrigerate any leftovers and reheat in the toaster oven!

And see here below - I used the same technique basically to make full-size Macaroni & Cheese Cups - I topped with crushed crackers and butter before baking ... and lowered the oven temperature to 350 degrees and they took closer to 25 to 30 minutes.  Fun meal idea - especially if you have bits of leftover meat and veggies in the fridge you want to add in place of the bacon and scallions.
