Here is all you’ll need ... and of course, you can add fresh herbs or cheeses ... but I think it’s great the way it is ... and you can add a salad and a grilled cheese sandwich - and I bet life in your household would be just fine ... !!!

If you take a lunch to work and get tired of a sandwich - whip this up the night before - refrigerate it and simply reheat in the microwave at work - Voila!

Or - if you have starving children - and you’re running late on a dinner idea ... here’s a quick fix ... !!!

Or - ... if you have unexpected company drop in ... this is a great idea!

AND ... If you happen to be an empty nester or a single individual household - this one’s for you ... !!

OR ... if you want to make this recipe for more than “one” ... here’s the original recipe that I adapted mine from below!


  1. - 2 Tablespoons unsalted butter

  2. - 2 Tablespoons all-purpose flour

  3. - 2 (5.5 ounce each) cans of Tomato Juice

  4. - 1 teaspoon garlic powder (not pictured)

  5. - 1 teaspoon onion powder

  6. - 1/2 teaspoon chicken bouillon granules

  7. - pinch of sugar

  8. - splash or two of water  (or heavy cream)

  9. - Parmesan cheese & fresh basil for garnishing - Grilled Cheese Sandwich served on the side - optional, but YUMMY!!!


In a small to medium saucepan, melt butter over medium heat.  Once melted, add flour and whisk until it becomes a smooth paste.  Cook, while continuing to whisk, for 1 to 2 minutes - Do not burn.

Slowly whisk in each can of tomato juice, whisking to smooth out any lumps.  Add I like to keep the heat on my stove to medium so that it lessens the chances of burning while I’m incorporating the liquid.

Continue to whisk the mixture together - adding the garlic powder, onion powder and sugar ... AND ... a splash or two of water if the soup is too thick for your taste.  You could also use heavy cream instead of water for a more silky and indulgent texture.  I found that I only needed the smallest pinch of sugar - but you may want to taste as you go ...

And that my friends is IT!  Quick as can be - literally 5 minutes, maybe even less.  I topped mine with some Parmesan cheese shreds and some fresh basil - and it was a pretty fine LUNCH FOR ONE!  ENJOY!
