Ingredients:

 2 1/2 cup peeled and diced (large dice) russet or baking potatoes
 1 cup of water (for cooking potatoes)
 1/2 cup diced red and green onion
1/4 cup crumbled bacon pieces (more if desired and/or for garnish)
 Homemade Ranch Dressing & Dip (to taste)
 Yellow Mustard (to taste)
 Pickle Juice (to taste)
 Heavy Cream (to taste)
 Kosher salt (to taste)
 Fresh parsley for garnish, optional

Directions:

Place the potatoes in the pot of your pressure cooker and sprinkle with kosher salt.  Add 1 cup of water and lock the lid in place.  Cook the potatoes over High Pressure for 5 minutes.  Release the pressure naturally.  Carefully remove the lid to avoid any steam that might still be present.  Drain the potatoes into a colander and set aside in a mixing bowl.  To the potatoes, add the onions and bacon.  Set aside to cool and refrigerate if possible.

While the potatoes are cooling, make your dressing.  My Homemade Ranch Dressing & Dip - was much more on the dip side ... I hadn’t added much milk to it, plus I had bumped up the spices by a smidgen.  I placed a couple of Tablespoons of the ranch dip into a separate mixing bowl.  To that I added a teaspoon or so of yellow mustard and a few splashed of pickle juice.  I stirred that around and thinned it a little bit with heavy cream.  If your ranch is more on the dressing consistency side (versus like a dip) - be careful that it’s not too thin - you likely won’t need the heavy cream - and if it’s too thin - you’ll need to thicken it up with a Tablespoon of mayonnaise at a time until it’s where you like it.  Taste one last time - and if possible, allow this mixture to chill in the refrigerator and to allow the flavors to marry.  Then you can taste and adjust for seasonings after a couple of hours in the fridge.

Once you’re ready to serve - mix the dressing with the potato mixture.  Add more bacon pieces of you like!  Garnish with fresh parsley if desired!
