The health benefits of quinoa are definitely mounting - you see it featured in more online recipes day after day.  It pairs well with a variety of foods and can be incorporated into dishes like salads and soups!  Plus - for those of us with smaller households that will eat quinoa - it stores well in the refrigerator or freezer! Freezing it in portioned out 4 ounce (roughly 3/4 cup) measures works well for us!!  This recipe makes about 4 cups total.


  1. - 1 1/2 cups quinoa

  2. - 2 1/2 cups water

  3. - 3 to 4 Tablespoons canola oil

  4. - Salt and Freshly Ground Black Pepper


Combine the quinoa with the water in the pressure cooker and drizzle the water with 1 Tablespoon of the oil.  Lock the lid in place and cook at High Pressure for 5 minutes.

Quick release the pressure and remove the lid, tilting the pot away from you to avoid the escaping steam.  Stir the quinoa.  If there is still some water in the bottom of the pot, use a slotted spoon to transfer the quinoa to a serving bowl.  Season with salt and pepper.  (Ours has always been done perfectly).

If you’re serving immediately, drizzle with the additional 2 to 3 Tablespoons of oil.  Or let it cool and store in airtight containers in the refrigerator for up to 2 days or in the freezer for up to a month.  This is a very versatile food - so take a peek around online and see what excites your tastebuds!  ENJOY!!
