1. - 3/4 cup heavy cream + more if desired

  2. - 1 packet Tomato & Cilantro Sazon

  3. - 1/4 to 1/2 of a packet of Fiesta Ranch Seasoning (or Spicy Ranch)

  4. - Previously cooked Zesty Pinto Beans  (We used about 1 1/2 - 2 cups)

  5. - 4 slices American Cheese

  6. - Sour Cream, Cilantro for garnishing

  7. - Optional - 1/4 cup bean broth, 1 - 2 Tablespoons unsalted butter


To a small to medium-size saucepan, add cream, Sazon packet and Fiesta Ranch.  Heat to a boil over medium heat.  Simmer a couple of minutes until slightly thickened.  Add Zesty Pinto Beans.  Stir to combine and taste for seasoning, adjust if necessary by adding more Fiesta Ranch Seasoning if a spicier taste is desired.  If mixture is too thick - you can add bean broth and/or butter.  Tear up cheese slices and stir in.  Serve with a dollop of sour cream and fresh cilantro.


If doing a Taco Bar - jazz it up even more by serving next to Slow Cooker Cheesy Mexican Rice Casserole and Spicy Shredded Beef - ENJOY!!
