Eric did most of the cooking this weekend, it was a nice break for me so I could tend to my other obligations.  He made the Perfect Skillet-Cooked Seasoned Chicken Breasts for one meal and there was just a tiny bit leftover!  So - when I was ready for a quick lunch alone - this hit the spot and kept me going all day!


Enough rambling ... On to the recipe:


According to a chart found on WholeFoods.com, Couscous is “made from coarsely ground, precooked semolina - it’s technically a pasta but is typically used like a grain”.  So - I will organize it under the Pasta Recipe Index but will also include a link from the Grain Recipe Index!


Couscous is quick and incredibly simple to prepare.  A lot of times I make a quick batch of it just for myself if Eric isn’t in the mood for anything starchy, and I am ... it’s that easy!


This is a serving for One - easily doubled, tripled, etc. 


Ingredients Used:


Lemony Couscous: Make the couscous according to your package directions.  I made mine by boiling a mixture of milk, chicken broth and a splash of olive oil.  Then I added in the zest from half of a lemon and a pinch of garlic powder.  Once the liquid was up to a boil, I added in the couscous, put a lid on the saucepan and pulled it off the heat for 5 minutes for the liquid to be absorbed. 


While the 5 minutes were ticking away - I heated a tiny bit of oil in a skillet along with a pinch of red pepper flakes.  Then, I added leftover Perfect Skillet-Cooked Seasoned Chicken Breast - about 2 ounces, diced.  I basically just stirred it around to heat through.  Then I tossed in a handful of baby arugula leaves and tossed those around in the pan until wilted.


By this time, everything should be done - love it when timing works out and dishes are minimal!  Simply put the lemony couscous on your plate, and top it with the chicken and arugula mixture from the skillet.  I added in a few slices of red onion and some nice shreds of Parmesan Cheese.  Then I squeezed the juice of the whole lemon over the top of the salad - and lunch was served!  ENJOY!
