1. -Flour tortilla

  2. -Unsalted butter, softened, at room temperature

  3. -Garlic powder

  4. -Kosher salt

  5. -Freshly grated cheese(s) of choice  (I used Sharp White Cheddar)

  6. -Red Onion, a few small thin slices (optional, for crunch)

  7. -Sour Cream, etc., for garnishing


Spread butter thoroughly over one side of a flour tortilla (an off-set spatula worked well for me).  Heat a non-stick skillet to 350 degrees (test using an infrared thermometer if you have one - I got ours at a hardware store).  Lay the buttered side of the tortilla into the skillet.  Allow it to brown slightly and then remove to a plate, keeping the cooked side facing up.

To the cooked side of the tortilla (while it’s still warm), sprinkle a small amount of garlic powder and kosher salt.  Next - On either the top or bottom half of the tortilla, sprinkle cheese(s) of choice.  Then lay a couple of slices of onion on top of the cheese (I like the onion for crunch, it’s not necessary).  Fold the “un-filled” side of the tortilla over on to the top of the cheese and onion.  Press down gently to adhere.  The tortilla should be slightly crisp on the inside when folded.

Then butter both sides of the folded tortilla and lay the quesadilla back into the heated skillet.  Let it cook for a minute or two on one side, checking to be sure the butter isn’t browning too quickly.  Then flip and brown the other side.  If the cheese needs more cooking time to melt, pop a lid onto your skillet and reduce the heat - kind of like in the “Secrets To Making The Best Grilled Cheese”.

Remove the quesadilla to a cutting board, dust lightly with kosher salt if desired.  Cut into thirds and place on a serving plate with garnishes of choice.
